Healthy Oatmeal Cookies

  1. Preheat oven to 350F, with racks in upper and lower thirds.
  2. In a medium bowl, whisk together both flours and baking powder.
  3. In a large bowl, whisk together oil, sugar, egg, and vanilla.
  4. Add flour mixture and stir to combine; mix in oats and currants.
  5. Using 2 tablespoons dough per cookie, roll into balls; place 1 1/2 inches apart on two parchment-lined baking sheets.
  6. Bake until lightly browned, 15 to 17 minutes, rotating sheets from top to bottom and front to back halfway through.
  7. Let cool 5 minutes on sheets, then transfer cookies to a wire rack to cool completely.
  8. Cookies can be stored in an airtight container at room temperature up to 5 days.
