Healthy Oatmeal Cookies
- 1/2 cup whole-wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/3 cup vegetable oil, such as safflower
- 2/3 cup packed dark-brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/2 cup old-fashioned rolled oats (not quick-cooking)
- 1/2 cup dried currants or raisins
- Preheat oven to 350F, with racks in upper and lower thirds.
- In a medium bowl, whisk together both flours and baking powder.
- In a large bowl, whisk together oil, sugar, egg, and vanilla.
- Add flour mixture and stir to combine; mix in oats and currants.
- Using 2 tablespoons dough per cookie, roll into balls; place 1 1/2 inches apart on two parchment-lined baking sheets.
- Bake until lightly browned, 15 to 17 minutes, rotating sheets from top to bottom and front to back halfway through.
- Let cool 5 minutes on sheets, then transfer cookies to a wire rack to cool completely.
- Cookies can be stored in an airtight container at room temperature up to 5 days.
