Sunnyside Ups in Hanpen Fishcakes

  1. Use a heart-shaped cookie cutter to cut out the hanpen.
  2. Spread a modest amount of oil on a pan.
  3. Pan-fry the hanpen with the heart-shaped hole.
  4. Flip over when browned.
  5. Crack an egg into the heart-shaped hole.
  6. Cover the pan and cook on the lowest heat.
  7. Transfer onto a serving dish when the egg is cooked to preferred firmness.
  8. Using the same pan, pan-fry both sides the heart-shaped hanpen.
  9. If you wish, add butter and brown it towards the end.
  10. Dish it up, and decorate with ketchup.
