Apricot Chutney
- 750 g fresh apricots, stoned and chopped roughly
- 2 large onions, finely chopped
- 3 garlic cloves, crushed
- 250 g raisins
- 15 ml salt
- 500 ml brown sugar
- 30 ml fresh ginger, finely chopped
- 1 cinnamon stick
- 2 chilies, seeded and finely chopped
- 30 ml tomato puree
- 500 ml vinegar
- Place all ingredietns into a large stainless steel saucepan and heat gently, stirring constantly until sugar dissolves.
- Simmer gently for 1 hour until mixture is thick and flavoursome.
- Stir occasionally to prevent any sticking.
- Bottle and seal immediately using whatever method is best for you.
