Tomato and Corn Salsa
- 1 whole Large Tomato
- 1 cup Frozen Corn
- 1 Tablespoon Jalapeno, Minced (optional)
- 1 bunch Cilantro, Chopped
- 1 whole Lime
- Salt To Taste
- Dice tomato.
- Run cold water over the corn to defrost.
- Combine in a large bowl.
- If using jalapeno, add to the mixture.
- Add chopped cilantro.
- Cut lime in half and squeeze over the mixture.
- Salt to taste.
- Spoon into tacos instead of jarred salsa!
