Black And White Bean Salsa Recipe
- 3 Tbsp. extra virgin olive oil
- 1 1/4 c. fresh corn kernels or possibly frzn, thawed
- 1 x 16 ounce. can black beans rinsed and liquid removed
- 1 x 15 ounce. can white beans rinsed and liquid removed
- 1 c. minced red bell pepper
- 3/4 c. minced red onion
- 2 Tbsp. fresh lime juice
- 3 lrg clv garlic -- pressed
- 1 x jalapeno pepper seeded and chopped
- 1 Tbsp. minced fresh oregano or possibly 1 tsp. dry
- 1 Tbsp. chili pwdr
- 1 1/2 tsp grnd cumin
- 1 x salt and freshly grnd pepper
- Heat 1 Tbsp.
- oil in heavy large skillet over high heat.
- Ad corn and saute/fry till brown, about 3 min.
- Transfer to large bowl.
- add in 2 Tbsp.
- oil, beans, bell pepper, onion, lime juice, garlic, jalapeno, oregano, chili pwdr, and cumin.
- Season generously with salt and pepper.
- (Can be made 2 days ahead.
- Cover and chill.
- Bring to room temperature before serving.)
