Delicious Baked Mashed Potatoes Recipe
- 15 med. potatoes
- Lowfat milk
- 1 c. lowfat sour cream
- 1 c. grated chedder or possibly Jack cheese
- Extra grated cheese for topping
- 1/8 c. grated onion
- Salt and pepper to taste
- Cook peeled, sliced potatoes till tender.
- Drain.
- Mash potatoes with sufficient lowfat milk to fluff.
- Fold in lowfat sour cream, grated cheese, grated onion, salt and pepper.
- Put in buttered baking dish and top with extra grated cheese.
- Bake in preheated 350 degree oven for about 1 hour.
- Note: Potatoes can be made ahead of time.
- Refrigerated and baked just before serving.
