Chocolate Mint Bars Recipe
- 4 sqs. chocolate
- 2 c. sugar
- 1/2 teaspoon peppermint extract
- 1 c. sliced almonds
- 4 Large eggs
- 1 c. butter
- 1/4 teaspoon salt
- 1 c. flour
- Base: Heat chocolate and butter in double boiler.
- In large bowl beat Large eggs till frothy, stir in sugar and chocolate, add in extract.
- Stir in flour, salt and almonds, mix thoroughly.
- Pour on lined cookie sheet with foil and sprayed with Pam.
- Bake at 350 degrees for 20 to 25 min.
- Cold.
- Filling: Mix sugar and butter, add in extract and coloring.
- Spread proportionately over cooled cake base.
- Chill to set.
- Glaze: Heat chocolate in double boiler, add in butter till melted.
- Dribble hot glaze by spoon onto cold hard filling.
- Chill at least 5 min before cutting.
