Sparkling Mimosas
- 1-1/2 cups boiling water
- 1 pkg. (85 g) Jell-O Orange Jelly Powder
- 2-1/2 cups cold club soda
- 1 can (10 fl oz/284 mL) mandarin oranges, drained
- Add boiling water to jelly powder in large bowl; stir 2 min.
- until completely dissolved.
- Stir in club soda.
- Refrigerate 40 to 45 min.
- or until thickened but not set.
- Remove 1 cup jelly; place in medium bowl.
- Reserve for later use.
- Stir oranges into remaining jelly; spoon into 8 champagne glasses.
- Beat reserved jelly with mixer on high speed until doubled in volume; spoon over jelly in glasses.
- Refrigerate 3 hours or until firm.
