Lasagna Rolls

  1. Cook noodles.
  2. Drain and lay out separately on wax paper.
  3. Chop spinach and combine with ricotta, feta, nutmeg, salt, pepper, garlic, basil, and 3/4 cup of the Parmesan.
  4. Spread about 1/4 cup of the spinach mixture along entire length of each noodle; roll up noodles.
  5. Stand noodles on end and slightly apart in a baking dish.
  6. Pour sauce over noodles.
  7. Bake, covered, at 350F for about 30-40 minutes.
  8. Sprinkle with remaining 1/4 cup Parmesan and mozzarella.
  9. Let sit for 5-10 minutes before serving.
