Fiesta Breakfast Bake
- 1 lb. pork sausage
- 1/4 lb. fresh mushrooms, sliced
- 1 medium onion, chopped
- 8 to 10 eggs
- 1/4 cup sour cream
- salt and pepper
- 1/2 cup salsa
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 2 cups VELVEETA Mild Mexican Shredded Pasteurized Prepared Cheese Food
- Cook sausage, mushrooms and onion in a large skillet until sausage is cooked through.
- Drain; set aside.
- Combine eggs and sour cream in medium bowl; season to taste with salt and pepper.
- Whip egg mixture in blender for 1 minute; then pour into 13x9-inch baking dish.
- Bake in preheated 400F oven for 5 to 8 minutes or until mixture is softly set.
- Spoon salsa over top of egg mixture.
- Spread sausage mixture over top.
- Sprinkle with cheeses and VELVEETA.
- Refrigerate until 30 minutes before serving time.
- When ready to serve, bake in a 325F oven for 30 minutes.
