Small Prawn Fritters with an Egg White

  1. Peel the prawns (remove tails) and devein.
  2. Coat with 1 tablespoon of katakuriko (not listed) and rinse with water.
  3. Toss with a little salt and 1 tablespoon sake.
  4. In a bowl, cut the egg whites.
  5. Add all ingredients and mix.
  6. Pat dry the prawns in step 1.
  7. Dredge in the batter from step 2 and deep-fry.
  8. Serve with lemon and coarsely ground salt and pepper.
