Date Apple Coffee Bread Recipe
- 1 tbsp. instant coffee crystals
- 1 c. boiling water
- 1 1/3 c. snipped, pitted dates
- 2 1/4 c. all-purpose flour
- 3/4 c. packed brown sugar
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 beaten egg
- 2 medium apples, peeled, cored, and shredded (1 c.)
- 1/2 c. minced walnuts
- 2 tbsp. butter
- Dissolve coffee crystals in boiling water; pour over dates.
- Set aside.
- In a large mixing bowl, stir together flour, brown sugar, baking pwdr, salt, and soda.
- Combine egg, shredded apple, walnuts, butter, and coffee-date mix.
- Add in to flour mix, stirring just till mix is moistened.
- Turn into a greased 9 x 5 x 3 inch loaf pan.
- Bake in a 350 degree oven for 60 to 65 min or possibly till a wooden pick inserted into center comes out clean.
- Cold in pans 10 min.
- Remove from pan; cold on a wire rack.
