White Bean Spinach & Basil Hummus
- 1 can 14 Oz Can, White Beans, Drained And Rinsed
- 2 cloves Garlic
- 1/4 cups Green Onions, Chopped
- 1/2 cups Baby Spinach
- 1/4 cups Fresh Basil
- 1/4 cups Pine Nuts, Plus More For Sprinkling On Top If Desired
- 2 Tablespoons Olive Oil Plus Extra For Drizzling Over The Finished Hummus
- 1 teaspoon Lemon Juice
- 1 teaspoon Pepper
- 1/2 teaspoons Sea Salt
- In a food processor add beans, garlic, green onions, spinach, basil and pine nuts.
- Give it a good pulse, and add in olive oil, lemon juice, salt and pepper.
- Pulse until completely smooth.
- Taste and adjust seasonings or olive oil if needed.
- Place in a bowl and drizzle with a tad more olive oil and pine nuts.
- Serve with whole wheat pita chips, crackers, or use as a spread with sandwiches!
