Mediterranean Baked Cod
- 1/4 c. drained and chopped sun-dried tomatoes
- 1/2 red pepper
- 1 tsp. freshly grated lemon peel
- 2 tsp. chopped fresh thyme leaves
- 1/4 tsp. Freshly ground black pepper
- 1/4 tsp. salt
- 4 cod fillets
- 2 tbsp. fresh lemon juice
- Preheat oven to 450 degrees F. Spray 13" by 9" glass or ceramic baking dish with nonstick cooking spray.
- In small bowl, combine tomatoes, red pepper, lemon peel, thyme, black pepper, and 1/8 teaspoon salt.
- Place cod fillets in prepared baking dish.
- Sprinkle fillets with 1/8 teaspoon salt; top with tomato mixture.
- Drizzle with lemon juice.
- Bake 12 to 14 minutes or until fillets are opaque in center.
