Tahitian Chicken Recipe
- 2 frying chickens
- 1 c. orange juice
- 2 tbsp. lemon juice
- 1/2 c. brown sugar
- 2 tbsp. soy sauce
- 1 tbsp. cornstarch
- 2 cans pineapple chunks
- First oven fry chicken as follows: 1 1/3 c. Bisquick baking mix 2 1/2 teaspoon paprika
- Heat butter in rectangular pan.
- Coat chicken in Bisquick and paprika mix.
- Place skin sides down in pan.
- Bake 35 min at 400 degrees.
- Turn, bake about 15 min or possibly till done.
- Combine in saucepan, stirring constantly, juices, sugar, soy sauce, and cornstarch.
- Bring mix to a boil.
- When thick and clear, add in pineapple chunks only.
- Pour the sauce over the baked chicken.
- Place in oven and bake for 10 more min.
- Serve with wild rice.
