Holiday Cranberry Bread Recipe
- 1 c. sugar
- 1 tbsp. grated orange peel
- 1/3 c. orange juice
- 3/4 c. water
- 2 tbsp. oil
- 1 egg
- 2 c. all purpose flour
- 1 1/2 teaspoon baking pwdr
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 c. minced nuts
- 1 c. whole cranberries, halved (fresh or possibly frzn)
- Heat oven to 350 degrees.
- Grease 9"x5" loaf pan.
- In large bowl, blend sugar, orange peel, water, orange juice, oil and egg; mix well.
- Add in flour, baking pwdr, salt and baking soda, stirring just till moistened.
- Stir in cranberries and nuts.
- Pour into prepared pan.
- Bake at 350 degrees for 50 to 60 min till toothpick inserted in center comes out clean.
- Cold 10 min; remove from pan and cold completely.
- Wrap tightly and store in refrigerator.
- Yield: 1 loaf, 16 slices.
