Parmesan-Crusted Pork Tenderloins

  1. Preheat the oven to 375F.
  2. Pat the pork dry with paper towels and lightly season it with salt.
  3. In a small bowl, mix together the cheese, cumin and pepper.
  4. Press the mixture all over the pork, coating it as thoroughly as possible.
  5. Place the pork on a rimmed baking sheet or in a shallow roasting pan.
  6. Bake for 12 minutes.
  7. Turn the pork over and bake for 10 minutes longer.
  8. (The pork should be slightly pink in the center.)
  9. Remove the pork from the oven, transfer it to a cutting board, and let it rest for several minutes before serving.
  10. Cut the pork into 1/2-inch thick slices and serve immediately.
