Bok Choy Shiitake Stir Fry Recipe
- 1/2 lb shiitake mushrooms washed, sliced
- 2 Tbsp. vegetable oil
- 3 x garlic cloves chopped
- 1 Tbsp. grated fresh ginger
- 1 head bok choy minced 1" pcs
- 1/4 c. minced red bell peppers
- 1 bn green onions, green and white parts minced
- 1 Tbsp. dark sesame oil
- 2 Tbsp. sweet sherry
- 2 Tbsp. soy sauce Salt to taste
- 8 ounce Oriental noodles - (to 12 ounce) cooked
- 2 Tbsp. sesame seeds for garnish
- In a large skillet, saute/fry the mushrooms in the oil for 3 to 5 min.
- Add in the garlic, ginger, bok choy, peppers, green onions, sesame oil, sherry, soy sauce, and salt.
- Stir-fry till the bok choy and peppers are tender, about 5 to 8 min.
- Add in the noodles and mix.
- Serve on a platter and sprinkle the top with the sesame seeds.
- This recipe yields 4 servings.
