Green Beans with Shallots

  1. Blanch beans 3 minutes in a large pot of boiling water.
  2. Plunge immediately into ice water to set color and flavor.
  3. Drain.
  4. Heat oil in a nonstick skillet over medium heat.
  5. Add shallots and saute 8 to 10 minutes, stirring frequently, until lightly browned.
  6. Add beans and heat to serving temperature.
  7. Season.
