Apple Ginger Pie

  1. Heat oven to 400F.
  2. Combine all crust ingredients except 1/3 cup butter and water in bowl.
  3. Cut in 1/3 cup butter with pastry blender or fork until mixture resembles coarse crumbs.
  4. Stir in enough water with fork just until moistened.
  5. Shape dough into a ball; flatten slightly.
  6. Roll out on lightly floured surface into 12-inch circle.
  7. Fold into quarters.
  8. Place dough into ungreased 9-inch pie pan; unfold dough, pressing firmly against bottom and sides.
  9. Crimp or flute edge.
  10. Set aside.
  11. Combine all filling ingredients except apples in bowl.
  12. Add apples; toss lightly to coat.
  13. Spoon apple mixture into prepared crust.
  14. Combine all streusel ingredients except 1/4 cup butter in bowl.
  15. Cut in 1/4 cup butter using pastry blender or fork until mixture resembles coarse crumbs; sprinkle evenly over filling.
  16. Cover edge of crust with 2-inch strip of aluminum foil.
  17. Bake 35 minutes; remove foil.
  18. Continue baking 15-20 minutes or until crust is lightly browned and juice begins to bubble through streusel.
  19. Cool 1 hour.
  20. Serve warm with ice cream, if desired.
