Pineapple Saffron Martini
- 1 1/2 oz. premium vodka
- 2 1/2 oz. pineapple juice
- 1 oz. saffron syrup (see below)
- 3/4 oz. lemon juice
- 1 dash dandelion bitters
- 2 c. sugar
- 2 c. water
- 1/16 tsp. saffron threads
- Combine all ingredients in a cocktail shaker.
- Top with ice and shake vigorously.
- Strain into a chilled cocktail glass.
- Garnish with a few saffron threads.
- Saffron syrup: Combine sugar and water in a saucepan.
- Heat over low heat until sugar is dissolved.
- Add about saffron threads.
- Continue heating for about 5 minutes.
- Take off heat and let cool.
- Do not strain as saffron threads will continue to infuse into syrup.
- Bottle and refrigerate.
