Middle Eastern Salad Rolls
- 6 iceberg lettuce leaves, cut in half
- 12 cup hummus
- 12 cup grated carrot
- 12 cup coarsely chopped kalamata olive
- 12 cup diced English cucumber
- 12 cup coarsely chopped tomatoes
- 14 cup flat leaf parsley
- 1 tablespoon hot pepper sauce
- 1 tablespoon lemon juice
- Place lettuce on work surface.
- Spoon 4 teaspoons hummus down center.
- Divide carrot, olives, cucumber and tomato on top.
- Top with parsley pepper sauce and lemon juice.
- Roll up lettuce to enclose and place seam side down.
