Herbed String Bean Salad Recipe
- 1 (10 ounce.) pkg. French style string beans, thawed
- 1 c. black olives
- 1 c. Spanish olives
- 1 c. green onions (excluding bulb), minced
- 3/4 c. sliced celery
- 1/2 c. sliced pimiento
- 1 can artichoke hearts (in water), cut into quarters
- 1 c. sliced or possibly button mushrooms, canned
- 1 lg. green pepper, cut into rings
- 1 can anchovies (opt.)
- Bottled Italian salad dressing (oil based)
- Mix all ingredients except anchovies and green pepper rings with salad dressing and marinate at least 2 to 3 hrs in refrigerator.
- Place peppers and anchovies on top.
- Serve chilled.
- HINT: I use a wooden salad bowl and rub the inside of it with a cut garlic clove before mixing the ingredients.
