Healthy Chili
- 1 chopped red bell pepper
- 3 king oyster mushrooms
- 4 chopped baby carrots
- 2 celery ribs
- 13 onion
- 3 garlic cloves
- 28 ounces stewed tomatoes
- 14 ounces tomato sauce
- 10 ounces kidney beans
- 12 ounces corn
- 3 tablespoons chili flakes
- 3 tablespoons chili powder
- 1 14 teaspoons salt
- 1 cinnamon stick
- 3 dried apricot halves
- 14 cup raisins
- salt & pepper
- To pot add onion, pepper, mushrooms, carrots, celery, and garlic; cook till tender.
- Add stewed tomatoes, tomato sauce, beans, corn, chili flakes and powder, salt, pepper, cinnamon, apricots and raisins.
- Break up the stewed tomatoes while it's cooking so there are chunks.
- Bring to boil.
- Reduce to simmer for 30 minutes or more.take out cinnamon.
