Cider-Glazed Carrots

  1. Place carrots in large skillet.
  2. Cover with cider, and bring to a boil over medium-high heat.
  3. Reduce heat to medium-low; cover and cook 15 minutes.
  4. Remove lid, increase heat to medium-high and cook 15 minutes more, or until carrots are tender and most of cider has evaporated.
  5. Add oil to pan and cook over medium-high heat 7 to 10 minutes more, or until carrots are golden brown.
  6. Sprinkle with parsley, and serve immediately.
