Chicken Cacciatorie
- 6 bone in skinless chicken thighs
- 2 italian sweet peppers, seeded ans sliced
- 1 medium onion, sliced
- 8 button mushrooms, sliced
- 4 clove garlic, minced
- 1 28 ounce can whole italian tomatos
- 1/4 cup dry white wine
- 1/2 tsp black pepper and salt to taste
- 1/2 tsp italian seasoning spice blend
- 1 tsp hot sauce such as franks brand
- 1/4 cup grated parmesan cheese and more for serving
- 2 tbsp olive oil
- In a large deep skillet heat olive oil.
- Season chicken with salt and pepper and brown both sides in hot oil.
- Remove to a plate.
- In same skillet add mushrooms, peppers, onions and garlic, saute 5 minutes Add white wine and reduce until almost gone.Add tomatoes breaking them up with a spoon add remaining ingredients except cheese, return chicken to skillet.
- Cover and cook on low 45 to 60 minutes.
- Transfer to a serving platter and sprinkle with cheese.
- Serve with pasta or crusty bread for the extra sauce.
