Black Cherry Compote (Compote De Cerises Noires) Recipe

  1. Combine 2 c. water and dry cherries in large saucepan.
  2. Bring to boil.
  3. Reduce heat; simmer till water is reduced to 1/4 c., about 15 min.
  4. Scrape in seeds from vanilla bean; add in bean.
  5. Stir in dark cherries with juices and remaining ingredients.
  6. Simmer till cherries are tender and juices thicken, about 50 min.
  7. Cold.
  8. (Can be made 3 days ahead.
  9. Cover and chill.
  10. Serve at room temperature.)
  11. This recipe yields about 3 1/2 c..
  12. Comments: When in season, fresh cherries can be used in place of the frzn ones.
  13. Yield: 3 1/2 c.
