Black Cherry Compote (Compote De Cerises Noires) Recipe
- 2 c. water
- 1 c. dry tart cherries
- 1/2 x vanilla bean split lengthwise
- 2 lb frzn unsweetened pitted dark sweet cherries thawed, and juice reserved
- 2/3 c. honey
- 1 x cinnamon stick
- 3 whl cloves
- 1 tsp grated lemon peel
- Combine 2 c. water and dry cherries in large saucepan.
- Bring to boil.
- Reduce heat; simmer till water is reduced to 1/4 c., about 15 min.
- Scrape in seeds from vanilla bean; add in bean.
- Stir in dark cherries with juices and remaining ingredients.
- Simmer till cherries are tender and juices thicken, about 50 min.
- Cold.
- (Can be made 3 days ahead.
- Cover and chill.
- Serve at room temperature.)
- This recipe yields about 3 1/2 c..
- Comments: When in season, fresh cherries can be used in place of the frzn ones.
- Yield: 3 1/2 c.
