Potato Soup
- 2 knockwurst, links sliced
- 12 cup celery, chopped
- 14 cup onion, minced
- 12 teaspoon caraway seed
- 2 tablespoons butter
- 2 cups milk
- 12 cup potato flakes
- 12 teaspoon fresh thyme
- 14 cup fresh parsley, chopped
- pumpernickel crouton
- In a large saucepan, brown knockwurst.
- Add celery, onion, caraway seeds, and butter.
- Cook until celery and onion are tender.
- Blend in milk, potato flakes, parsley, and thyme, stirring occasionally.
- Served garnished with pumpernickel bread croutons.
