Quick Veggie Medley 2
- 1 yellow squash; half moons
- 1 zucchini; half moons
- 1 bunch asparagus; trimmed
- 1/2 red onion; large dice
- 1/2 cup white wine
- 3 tbsp olive oil
- 1 salt and pepper
- Heat oil in large saute pan.
- Add Veggies.Toss.
- Season.
- Toss
- When veggies are nearly tender, add wine.
- Cover.
- Cook until wine is evaporated.
- Approximately 5 minutes
- Variations; Lemon, fresh herbs, mustard
