Cheesecake Pie
- 8 ounces fat free cream cheese, softened
- 2 cups low-fat milk or 2 cups skim milk
- 1 (1 ounce) package sugar-free instant lemon pudding (1 small pkg, 4-serving size)
- 1 (9 inch) fat-free graham cracker crust
- Beat cream cheese until very soft.
- Blend in 1/2 cup milk until smooth.
- Add remaining milk and the pudding mix.
- Beat slowly for one minute.
- Pour into crust.
- Chill at least one hour, or until set.
