Gratineed Ziti
- 1 medium onion, coarsely chopped
- 3 medium garlic cloves, finely chopped
- 2 Tbsp. extra virgin olive oil
- 1 (35 oz.) can Italian peeled tomatoes
- 1/4 tsp. crushed red pepper
- 3/4 tsp. salt
- 1/4 tsp. black pepper
- 10 oz. dried ziti (about 3 c.)
- 1 lb. fresh spinach, stems discarded, thoroughly washed and coarsely chopped
- 6 oz. part skim Mozzarella cheese, cut in 1/2-inch diced pieces
- 1 c. freshly grated Parmesan cheese
- In a large skillet, cook onion and garlic in oil until onion is soft.
- Break up tomatoes and add with juice to skillet.
- Stir in crushed red pepper.
- Increase heat and boil sauce.
- Stir until liquid has evaporated (about 18 minutes).
- Season with salt and pepper.
- Keep warm.
