Chorizo Quesadillas

  1. Cook chorizo and onion over medium high heat until browned, about 10 minutes.
  2. Drain.
  3. Spread a thin layer of the soup on 8 of the tortilla shells.
  4. Add 2-3 tablespoons of the meat mixture on each of the 8 tortillas.
  5. Place 1-2 tablespoons of monterey jack cheese on top of the meat mixture.
  6. Top each with one of the remaining shells.
  7. Bake in a 375 degree oven for 15 minutes turning each at the half way point.
  8. The quesadillas should be lightly browned when done cooking.
  9. Cut each into quarters and enjoy.
