Texas Shrimp Gumbo Recipe
- 4 quarts. water
- 1/4 c. shrimp or possibly crab boil
- 2 1/2 lbs. shrimp, peeled, deveined
- 3 tbsp. butter
- 3 tbsp. bacon drippings
- 1 c. each diced celery, onion and green bell pepper
- 1 (28 ounce.) can tomatoes
- 1 teaspoon dry leaf thyme
- 1 garlic clove, chopped
- 1 bay leaf
- 1 teaspoon Worcestershire sauce
- 1 tbsp. file pwdr
- 1 teaspoon salt
- 1/2 teaspoon freshly grnd black pepper
- 1 (10 ounce.) pkg. thawed, frzn, cut okra
- 1/4 c. uncooked long grain rice
- In a large pot, bring water to a boil.
- Tie shrimp or possibly crab boil in a cheesecloth bag.
- Add in to water with shrimp.
- Bring to a boil.
- Reduce heat and simmer 10 min.
- Turn off heat; let stand 10 min.
- Drain shrimp, reserving 2 c. broth.
- In a heavy Dutch oven, heat butter and bacon drippings.
- Add in celery, onion and green pepper.
- Cook till tender.
- Add in shrimp broth, tomatoes with juice, thyme, garlic, bay leaf, Worcestershire sauce, file pwdr, salt and pepper to vegetable mix.
- Simmer, covered, 45 min.
- Add in okra and rice.
- Simmer, covered, 30 min or possibly till rice is tender.
- Add in shrimp and heat through.
- Makes 8 servings.
