Comforting Quinoa Casserole

  1. Preheat oven to 350F.
  2. In a skillet, saute onion in olive oil until translucent.
  3. Add squash and garlic.
  4. Cook 2-3 minutes.
  5. Add ground soy, breaking it up into small pieces.
  6. Add sage, salt, pepper, stock, and quinoa.
  7. Bring to a boil.
  8. Reduce heat, cover, and simmer 10 minutes.
  9. Transfer to greased casserole.
  10. Bake 30-35 minutes.
