For Your Bento! Sweet and Sour Fishcake Sticks and Eggplant
- 1 to 2 Chikuwa
- 1/2 to 1, depending on the size Eggplant (small Japanese variety)
- 1 tsp Sugar
- 1 tsp Soy sauce
- 1 tbsp Water
- 1 Vegetable oil or sesame oil
- 1 Sesame seeds
- 1 Ichimi spice or shichimi spice
- Cut the chikuwa into about 6 pieces.
- Chop the eggplant into similar sized pieces.
- Add oil to a small pot, lightly saute, then add sugar, soy sauce, and water, and continue sauteing until the water content is completely reduced.
- Too much water will evaporate over high heat, so heat over medium heat.
- Sprinkle sesame seeds and it's ready to serve.
- Sprinkle ichimi or shichimi spice to taste.
