Boysenberry Banana Muffins Recipe
- 2 c. Flour
- 1/2 tsp Baking pwdr
- 3/4 tsp Baking soda
- 1/4 tsp Salt
- 1/4 lb Butter
- 1 c. Sugar
- 2 x Large eggs
- 3 x Overripe bananas
- 1/4 c. Lowfat sour cream
- 1 tsp Vanilla
- 1 pt Cleaned Boysenberries
- 1/2 c. Minced toasted almonds
- Sift together flour, baking pwdr, baking soda, and salt.
- Cream butter with sugar till fluffy.
- Beat in Large eggs.
- Puree bananas, lowfat sour cream and vanilla.
- Alternate add in dry ingredients in 3 additions and banana mix in 2 additions to the egg mix.
- Beat sufficient to incorporate.
- Mix in Boysenberries and toasted almonds.
- Spoon into greased muffin tins and bake in a preheated 350 deg F oven for about 25 min, till puffed, browned and springy.
- Makes about 15 muffins.
