Buffalo Chicken Nachos
- 1 bag (13 Oz. Size) Tortilla Chips
- 8 ounces, weight Cream Cheese
- 23 cups Red Hot Wing Sauce
- 3 ounces, weight Cooked Bacon, Crumbled
- 25 ounces, weight Frozen Popcorn Chicken
- 4 cups Shredded Mexican Blend Cheese
- 4 ounces, weight Crumbled Blue Cheese
- 1 cup Crema Mexicana
- Preheat oven to 425 F. Line a jelly roll pan with parchment paper and fill with tortilla chips.
- In a microwave-safe medium sized bowl, combine cream cheese, wing sauce and bacon pieces.
- Cook in the microwave for 2 minutes, stir and then return to microwave and cook for 2 additional minutes.
- Toss with chicken.
- Spread chicken mixture, shredded cheese and blue cheese over chips.
- Bake for 15-20 minutes, until cheese is melted and chicken is cooked.
- Drizzle crema Mexicana over nachos before serving.
