Orange & Chocolate Spritz Sandwiches
- 1 cup Land O Lakes Butter, softened
- 3/4 cup sugar
- 1 Land O Lakes Egg
- 1 teaspoon vanilla
- 1 teaspoon freshly grated orange zest
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup bittersweet or semi-sweet chocolate chips
- 2 teaspoons shortening
- Coarse grain sugar
- Red cinnamon candies, if desired
- White decorator frosting or gel, if desired
- Heat oven to 375F.
- Combine butter and sugar in bowl; beat at medium speed until creamy.
- Add egg, vanilla and orange zest; continue beating until well mixed.
- Add flour and salt; beat at low speed until well mixed.
- Place dough into cookie press; form desired shapes 1 inch apart onto ungreased cookie sheets.
- Sprinkle cookies with coarse grain sugar.
- Bake 8-10 minutes or until cookies are set.
- Remove to cooling rack.
- Cool completely.
- Place chocolate chips and shortening in bowl.
- Microwave, stirring every 15 seconds, 45-60 seconds or until chocolate is melted and mixture is smooth.
- Spoon 1/2 teaspoon chocolate onto bottom-side of 1 cookie; top with another cookie, bottom-side down.
- Repeat with remaining cookies.
- Attach red cinnamon candy onto center of each cookie with white decorator frosting, if desired.
