Aromatic Carrot Soup

  2. Melt the butter with the oil in a large saucepan over low heat.
  3. Add the onions and cook, stirring, until wilted, about 15 minutes.
  4. Sprinkle with ginger and mace; cook, stirring, for 1 minute.

  6. Add the carrots, broth, and orange zest.
  7. Bring to a boil, reduce heat, and simmer, partially covered, about 20 minutes.
  8. Cool slightly.

  10. Puree in batches in a food processor.
  11. Return to the pot; stir in orange juice, salt, and pepper.
  12. Heat over low heat.
  13. Garnish with chives.
