Old-Fashioned Teacakes

  1. Cream butter; gradually add sugar, beating well.
  2. Add eggs one at a time, beating well after each addition.
  3. Add buttermilk, beat well.
  4. Combine flour and soda; gradually stir into creamed mixture.
  5. Stir in almond extract.
  6. Chill dough, tightly wrapped, several hours, or overnight.
  7. Roll dough to 1/4-inch thickness on a lightly floured surface.
  8. Cut into rounds with biscuit/cookie cutter.
  9. Place on a lightly greased cookie sheet, and sprinkle with additional sugar.
  10. Bake at 400-degrees for 7-8 minutes.
  11. Remove to wire racks to cool.
  12. These may be served plain, but I prefer to make a buttercream and frost them.
