Venison Strips
- 1 1/2 lb. venison ham
- 1 green bell pepper
- 2 Tbsp. margarine
- 1 onion, thinly sliced
- 1 Tbsp. game seasoning (or seasoned salt)
- Trim all fat from venison.
- Partially freeze steak for easy slicing.
- Cut into paper-thin slices.
- Seed green pepper, slice into thin rounds.
- Heat margarine in heavy skillet over medium heat.
- Add green pepper and onion.
- Cook for 5 minutes or until onion is transparent.
- Stir frequently.
- Remove to heated plate with slotted spoon.
- Heat additional butter in skillet if necessary.
- Add venison strips in single layer.
- Sprinkle with seasoning.
- Cook over medium high heat for 1 minute, turn strips over.
- Cook for 2 minutes longer.
- Add peppers and onion.
- Cook for several minutes longer, stirring constantly.
- Do not overcook. Serve immediately.
