Chocolate chip pumpkin muffins

  1. Preheat oven to 175F fan forced or 350 Fahrenheit.
  2. Line a 12 muffin tray with liners.
  3. Set aside
  4. In a large mixing bowl, whisk together the dry ingredients.
  5. Add chocolate chips.
  6. Reserving some for top of muffins.
  7. In another mixing bowl.
  8. Mix together the wet ingredients.
  9. Add the brown sugar.
  10. Mix well
  11. Stir the wet ingredients into the dry ingredients.
  12. Mix until combined.
  13. DO NOT OVERMIX.
  14. Scoop batter I not prepared muffins pan.
  15. Put chocolate chips on top of each muffin.
  16. Bake for 18 - 22 minutes or until cake tested comes out clean.

  18. Let cool in pan then transfer to wire rack.
  19. Enjoy warm or cold.
