Mini Chocolate Casseroles
- 1/2 cup sugar plus 3 tablespoons
- 4 tablespoons milk, low-fat
- 2 tablespoons cocoa powder plus 2 teaspoons, unsweetened
- 2 tablespoons butter, unsalted
- 5 tablespoons flour, all-purpose
- 1 teaspoon vanilla extract
- 1 large egg whites
- 8 teaspoons chocolate chips (semi-sweet)
- 1 pinch salt
- 1/2 ounce chocolate unsweetened, chopped
- Preheat oven to 350.
- Coat 4 (2-ounce) ramekins with cooking spray or grease with butter, and sprinkle 3/4 teaspoon sugar into each of the ramekins, shaking and turning to coat.
- Set prepared ramekins aside.
- Whisk 1/2 cup plus 2 tablespoons sugar, milk, and cocoa in a small saucepan until well blended.
- Bring to a boil over medium heat.
- Cook until the sugar dissolves, about 35 seconds, stirring frequently.
- Remove from heat, stir in the butter and 1/2 ounce unsweetened chocolate until the chocolate melts and mixture is smooth.
- Cool chocolate mixture for 9 to 11 minutes.
- Whisk in the flour, vanilla, salt, and egg white into the chocolate mixture just until incorporated.
- Place 2 tablespoons chocolate mixture into each prepared ramekin, and top each with 2 teaspoons chocolate chips.
- Bake until barely set, about 18 to 22 minutes.
- Let cool on a wire rack for 10 minutes.
- Invert onto the plates.
- Serve warm, room temperature or chilled.
