Mini Chocolate Casseroles

  1. Preheat oven to 350.
  2. Coat 4 (2-ounce) ramekins with cooking spray or grease with butter, and sprinkle 3/4 teaspoon sugar into each of the ramekins, shaking and turning to coat.
  3. Set prepared ramekins aside.
  4. Whisk 1/2 cup plus 2 tablespoons sugar, milk, and cocoa in a small saucepan until well blended.
  5. Bring to a boil over medium heat.
  6. Cook until the sugar dissolves, about 35 seconds, stirring frequently.
  7. Remove from heat, stir in the butter and 1/2 ounce unsweetened chocolate until the chocolate melts and mixture is smooth.
  8. Cool chocolate mixture for 9 to 11 minutes.
  9. Whisk in the flour, vanilla, salt, and egg white into the chocolate mixture just until incorporated.
  10. Place 2 tablespoons chocolate mixture into each prepared ramekin, and top each with 2 teaspoons chocolate chips.
  11. Bake until barely set, about 18 to 22 minutes.
  12. Let cool on a wire rack for 10 minutes.
  13. Invert onto the plates.
  14. Serve warm, room temperature or chilled.
