Cookies and (Ice) Cream

  1. Arrange cookies flat-side up.
  2. Place 1/2 cup scoop of slightly softened ice cream onto 8 of the cookies.
  3. Spread ice cream into an even layer.
  4. Top each with a cookie, gently pressing cookies together until ice cream forms an edge around the outside.
  5. Freeze 30 minutes.
  6. Roll edges of sandwiches in any of your favorite toppings.
  7. Serve immediately or wrap each sandwich in plastic wrap and store in the freezer.
