Irish Stew

  1. Preheat oven to 350F
  2. Put alternate layers of lamb, onion and potato in a casserole, season with salt and pepper and thyme, finishing with a layer of potato.
  3. Pour lamb stock over top.
  4. Cover and cook for about 2 1/2 hours.
  5. Serve, sprinkled with parsley.
