Irish Stew
- 1 lb lean lamb, cubed
- 2 medium onions, sliced thinly
- 2 lbs potatoes, sliced
- salt & freshly ground black pepper, to taste
- 1 tsp.dried thyme
- 10 ounces lamb stock
- chopped fresh parsley
- Preheat oven to 350F
- Put alternate layers of lamb, onion and potato in a casserole, season with salt and pepper and thyme, finishing with a layer of potato.
- Pour lamb stock over top.
- Cover and cook for about 2 1/2 hours.
- Serve, sprinkled with parsley.
