Tricolor Boboli Pizzas

  1. Heat olive oil and saute onions and peppers until beginning to brown, stirring frequently, about 10 minutes.
  2. Preheat oven to 450F (230C).
  3. Place Boboli on pizza pan.
  4. Spread each with half of onion mixture.
  5. Sprinkle with goat cheese.
  6. Bake until cheese softens, about 10 minutes.
  7. Remove from oven.
  8. Sprinkle with oregano and pine nuts.
  9. Cut into wedges and serve.
