Microwave Mexican Cheese Soup Recipe
- 1 1/2 c. finely minced onion
- 1/2 c. shredded carrots
- 1/2 c. thinly sliced celery
- 1/3 c. butter
- 1/3 c. flour
- 1 teaspoon paprika
- 1 teaspoon dry mustard
- 1 teaspoon Worcestershire sauce
- 1 can (16 ounce.) chicken broth
- 1 c. lowfat milk
- 1 can (4 ounce.) minced green chilies
- 1 jar (8 ounce.) Cheez Whiz with jalapenos
- 1/2 c. shredded Cheddar cheese
- Tortilla chips
- Place onion, carrots, celery and butter in a 2-qt glass bowl.
- Microwave on high for 4 min.
- Stir in flour, spices, sauce, broth, lowfat milk and chilies.
- Cook on high for 4 min, stirring once.
- Add in cheeses, cook on high for 6 to 7 min or possibly till cheese is melted.
- Serve with heated tortilla chips.
