Libby Danti'S Sauce With Sausage

  1. In a large pot, mix tomatoes, seasonings, wine and water. Stir and simmer 10 minutes.
  2. In skillet, fry sausage and remove from pan.
  3. Leave a small amount of oil in pan.
  4. Saute onions and mushrooms. When cool, cut sausage in slices. Add to skillet.
  5. Stir and simmer 5 minutes.
  6. Add to large pot. Bring to a boil.
  7. Lower heat and let simmer slowly, covered, 1 hour.
  8. Uncover and continue cooking for 1 to 1 1/2 hours at low heat.
  9. If sauce is too thick, add more water to your taste.
  10. Stir occasionally during cooking.
