Libby Danti'S Sauce With Sausage
- 1 lb. sweet Italian sausage
- 1 lb. fresh mushrooms, sliced
- 1 (28 oz.) can crushed tomatoes
- oregano, salt and pepper to taste
- 1 (28 oz.) can tomato puree
- 1 c. red dry wine
- 3 onions, sliced thin
- 2 c. water
- In a large pot, mix tomatoes, seasonings, wine and water. Stir and simmer 10 minutes.
- In skillet, fry sausage and remove from pan.
- Leave a small amount of oil in pan.
- Saute onions and mushrooms. When cool, cut sausage in slices. Add to skillet.
- Stir and simmer 5 minutes.
- Add to large pot. Bring to a boil.
- Lower heat and let simmer slowly, covered, 1 hour.
- Uncover and continue cooking for 1 to 1 1/2 hours at low heat.
- If sauce is too thick, add more water to your taste.
- Stir occasionally during cooking.
