Zucchini & Tomato Gratin
- 1 cup shredded Cracker Barrel Light Cheddar Cheese
- 1/4 cup Kraft 100% Parmesan Light Grated Cheese
- 1 tsp. Italian seasoning
- 3 zucchini, sliced
- 2 large tomatoes, sliced Safeway 1 lb For $1.29 thru 02/09
- 1/4 cup dry whole wheat bread crumbs
- 2 green onions, sliced
- 1 Tbsp. non-hydrogenated margarine, melted
- Heat oven to 375 degrees F.
- Combine first 3 ingredients.
- Layer half the zucchini, 1/4 cup cheese mixture and half the tomatoes in 2-L casserole dish; cover with 1/4 cup of the remaining cheese mixture.
- Repeat layers.
- Mix remaining ingredients; sprinkle over ingredients in casserole dish.
- Bake 30 to 35 min.
- or until vegetable mixture is heated through and topping is golden brown.
