Bailey's Irish Cream Truffles

  1. Melt chocolate, Bailey's and heavy cream over very low heat.
  2. Whisk in yolks, one at a time, mixture will thicken.
  3. Whisk in butter.
  4. Refrigerat eovernight, or until firm.
  5. With spoon make small balls.
  6. Roll in powdered sugar, cocoa, chopped nuts, sprinkles, etc.
